My mother, my inspiration.
Fridays and Saturdays in 2011 will be a dedication to my mother, Sushila. Champor will showcase not only her favourite food, but also long forgotten traditional and village food. Her mother’s recipes, her favourite haunts in Penang.
To bring these dishes to life, Nitaya Wittmann & Ksaraporn will help me. Nitaya has the fineness and the experiences of the spices and dishes. She too has brought along her mother’s recipes many years ago. Recipes that were handed down for generations. Not only does Nitaya have the cooking-skills, but also a talent to translate my feelings and memories. She founded the first Thai restaurant in Munich in 1977. The "Feinschmecker" named Nitaya as the "Best Chef for Thai Cuisine". She is also a trainer in the "Ecole Culinaire" – Otto Koch Schule and has already cooked with many well-known German chefs. She published some cooking books on authentic Thai cuisine.
